BBQ in the Sunshine on a Saturday afternoon (5th of June)

After yesterday's meal at Launceston Place we decided to have a BBQ at Karin's house. In addition to the usual sausages and burgers we also did some fish. One of them being fish in foil.

we just thinly sliced some fennel (note: you really need to slice it thinly so it cooks in time) sliced some spring onions and chili, add some cod fillets and top with lemon slices, salt, pepper, butter and white wine. Seal the foil packet and put it on the BBQ for 10 - 15 min depending on the thickness of the fish. Very nice!




We also decided to reproduce yesterday's rice pudding souffle.. so Karin made some basic rice pudding in the morning (needs to cool) and we then whisked up eggwhites with sugar and folded through. Filled some buttered and sugared ramekins and cooked in the oven for 10-12 min.. and voila! They were fab!!! Do i dare to say that they were on par with the ones last night? We still need to work on the presentation since the ramekins were too big and we couldn't fill them to the top. (you would then take a palett knife and make the surface flat - they then rise evenly and create a tophat effect). Anyway, for a first attempt it was fine... and the flavor and texture was spot on!
